Christmas Cookie Gift Packaging and a Recipe!

Merry Christmas! Or, Happy Holidays, if you don’t celebrate Christmas. Today, I’m sharing a fun little post – about Christmas cookies! If you’ve been around here much, you know that I really like to bake. I’ve been doing it most of my life and not only do I love eating sweets, but baking is a lot of fun. It’s relaxing for me, and so something I like to do in my free time.

I always like baking treats around the holidays and in the past would bring them in to share with my office. But, this year, because I work from home now I don’t have any coworkers to help ease my own calorie intake, I decided to make some for family and friends. I made four types of cookies over about two weeks. If you’re going to do a lot of cookies like this I definitely recommend spreading it out. I made a prep list before I started anything and broke it up into smaller tasks I could do quickly. That way if I have a few minutes of free time or wanted a little mental break I could do some prep. And it definitely made things easier. Then I got these treat boxes, this pretty tissue and red ribbon from Target, and the gift tags from Home Goods to package everything up. I just love how festive they are!

Christmas Cookie Recipe Ideas

I made:
Homemade Oreos
Pistachio Thumbprints
Danish Salted Butter Cookies
Polenta Short Bread with Blood Orange Glaze

They’re all very good, but I think the polenta shortbread is my favorite. It’s a refreshing changing of pace that’s not too sweet, bright and citrusy, and has an interesting texture. I followed the recipe almost exactly, except that I halved the amount of powdered sugar in the glaze. Pro tip: if powdered sugar is ever an ingredient I always start with half and work up from there. It’s almost always too sweet for me otherwise.

Because I followed that recipe so closely I thought I’d share a different recipe with you. The Danish Salted Butter Cookies. These are also really delicious (they’re Xan’s favorite!), but were much harder to make, so I thought I’d share the recipe with my changes that make them a little easier. Plus, they would be great year round, not just during the holidays!

Unique Christmas Cookie Recipe

Ingredients

  • 1 cup (2 sticks) chilled salted butter, cut into pieces
  • ¾ cup granulated sugar
  • 1 vanilla bean, split lengthwise
  • 2 large eggs
  • 2 cups all-purpose flour, plus more
  • 1 cup white sanding sugar

Special Equipment

  • A 3-inch-diameter and a 1½-inch-diameter fluted cookie cutter

Recipe Preparation

  1. Combine butter and granulated sugar in a large bowl; scrape in vanilla seeds and discard pod. Using an electric mixer on high speed, beat until very light and fluffy, about 5 minutes. Beat in 1 egg. Reduce speed to low; gradually mix in 2 cups flour. Separate dough into thirds and form each third into a disk about and inch thick. Wrap in plastic and chill until firm, about 2 hours
  2. Place racks in upper and lower thirds of oven and preheat to 350°. Working with one disk at a time, let disk of dough sit at room temperature until slightly softened, about 5 minutes. Use plastic wrap on top of dough to roll out, this will keep the dough from sticking to your rolling pin. Work on a heavily floured sheet of parchment paper, shifting often on sheet and dusting with more flour as needed to keep from sticking, until about ¼" thick
  3. Punch out rounds with large cutter; punch out centers with smaller cutter. Transfer each cookie immediately after it’s been punched to a parchment-lined baking sheet, spacing 1½" apart. Pat scraps into a 1"-thick disk. Chill one hour.
  4. Beat remaining egg in a small bowl with 1 tsp. water; brush cookies with egg wash; sprinkle with sanding sugar. Freeze until frozen about one hour. Bake, rotating baking sheets halfway through, until edges are golden brown, 10–15 minutes. Transfer to wire racks; let cool. Repeat with scraps and remaining egg wash and sanding sugar.

Notes:

  • This dough is very soft and sticky which can make it hard to work with. But, chilling the dough frequently, using lots of flour, and working in these smaller batches should help.
  • You can use 1 tsp of vanilla extract in the place of a vanilla bean if you don’t’ have any on hand.
  • I used straight edge cookie cutter rather than fluted, from this set that I own. It’s come it handy so many times, I highly recommended if you cook or bake.

Easy Homemade Chocolate Buttercream Frosting

Hi guys! Today I’m sharing something a little different. Cooking, and especially baking, are both really big parts of my life and I thought I would start sharing some recipes here and there. And today I’ve got a GOOD one. Last week was Xan’s birthday and most years I bake him a cake. I’ve been baking for most of my life and I love it. But, since we’ve moved into this house the combination of a teeny tiny kitchen and so many projects I haven’t had a chance to do much of it. So, I knew it was happening this year. But, when I asked him he told me he didn’t want one because I’m not eating dairy so I wouldn’t be able to eat it. So sweet! But not happening 😂.

Cocktail hour!

This year for Christmas one of Xan’s stocking stuffers was a book called The 12 Bottle Bar. And ever since then he’s been pretty into making cocktails. It’s really a win-win. I got him a gift he’s happy with and then he ends up making cocktails for us to enjoy.

Momofuku cookies!

A couple months I became obsessed with Momofuku Milk Bar. I got the first cookbook and read it cover to cover. Her combinations and innovations are so cool. I think Christina Tosi is a genius. Though that is solely based on what I’ve seen and read. I have yet to actually go to a Milk Bar (crossing my fingers that a San Francisco location will be announced any day now). I’ve been wanting to make something from the book for a while now. But, most of the recipes seem pretty time consuming. And, almost every one has another recipe in it if not more. I needed to purchase a few key ingredients and utensils. Not to mention I’ve been trying to eat less added sugar and could hardly justify a whole batch of cookies for no reason. So I’ve been putting it off.

New Year

It’s January 3rd and I’m still working on my goals and resolutions. But, today, I slept in and lounged in bed for a while. It was really nice. I used to love getting up early and getting a head start on my weekend days. It feels like you’re getting away with something when you’re up and out before most everyone else in the city. But, lately I’ve been feeling the opposite. I’m really tired in the mornings even when I’ve slept a lot and it feels really good to cozy up in bed and just doing nothing. I think it’s because 2015 was a pretty tough year, if I’m being honest.

Gougères

A few weeks ago I posted a chocolate mousse recipe from Paris Pastry Club.

The second recipe I’ve tried and really liked from the book is the gougères (pronounced goo-zher…think French). I first made them as an appetizer for this year’s NYE dinner party. They were delicious. Salty, parmesan-ey, fluffy, and little gooey in the middle, with the tang and zest of a heap of paprika. They make a lovely appetizer, snack for girls night, or accompaniment to your favorite movie. Pair with wine for best results!

They don't keep for very long; 3-4 tops. But, they're best fresh from the oven. If I were you I'd eat them all up right then.

Chocolate Mousse

One of my Christmas gifts from Xander was a new cookbook, Paris Pastry Club. I love baking, but my current repertoire is largely classics. Brownies, cookies, cakes…you get the gist. This book is mostly made up of French classics with some other outside-of-the-box recipes mixed in. I’ve made three things from it so far and two have been outstanding. It’s been really exciting to bake from PPC because it’s so far outside of my normal. I’m getting to try new techniques, hone ones I already know but have little use for, and get fresh ideas for meals and dinner parties. As a (hobby) baker it’s been wonderfully stretching.
